研究方向
沈立言老师之研究欲结合中西医食品营养的各家观点与长处,利用细胞、动物与人体实验模式进行保健食品与食疗养生之相关研究,以提供人类养生保健之高附加价值食品。

研究分为4大组

1993年起所执行之国科会、农委会及行政院卫生署研究计画,主要利用细胞、动物与人体实验模式,针对大蒜、九层塔、七层塔、牛樟芝、灵芝、巴西洋菇、薑、天麻、金针花等具有重要生理机能性之食品素材进行研究,包括肝脏解毒代谢、抗氧化、细胞代谢产物、抑癌、细胞凋亡、细胞周期、讯息传递、抗忧郁、食物属性等方向之探讨。累积上述多年之研究经验,期望将此等保健食品与食疗养生之研究成果,对于提升人类的生活品质有所助益,且相关学术研究成果也获业界的爱戴,历年皆有机会和食品公司及生技公司合作,以利保健食品之认证与推广。

人体试验方面 ,利用脉诊仪与甲襞微循环仪,测试不同体质的人对寒性及热性食物之生理反应。探讨传统中医食物分类与人体生理反应的相关性。
近期本食疗研究室承蒙台大食品与分子生物研究中心江文章教授与爱之味公司总裁陈哲芳先生及研发总监陈冠翰博士大力支持得以将本食疗研究室传统中医食疗抗忧郁研究得以产品化,以期实能将研究成果与日常生活做结合。
