研究方向
沈立言老師之研究欲結合中西醫食品營養的各家觀點與長處,利用細胞、動物與人體實驗模式進行保健食品與食療養生之相關研究,以提供人類養生保健之高附加價值食品。

研究分為4大組

1993年起所執行之國科會、農委會及行政院衛生署研究計畫,主要利用細胞、動物與人體實驗模式,針對大蒜、九層塔、七層塔、牛樟芝、靈芝、巴西洋菇、薑、天麻、金針花等具有重要生理機能性之食品素材進行研究,包括肝臟解毒代謝、抗氧化、細胞代謝產物、抑癌、細胞凋亡、細胞週期、訊息傳遞、抗憂鬱、食物屬性等方向之探討。累積上述多年之研究經驗,期望將此等保健食品與食療養生之研究成果,對於提升人類的生活品質有所助益,且相關學術研究成果也獲業界的愛戴,歷年皆有機會和食品公司及生技公司合作,以利保健食品之認證與推廣。

人體試驗方面 ,利用脈診儀與甲襞微循環儀,測試不同體質的人對寒性及熱性食物之生理反應。探討傳統中醫食物分類與人體生理反應的相關性。
近期本食療研究室承蒙台大食品與分子生物研究中心江文章教授與愛之味公司總裁陳哲芳先生及研發總監陳冠翰博士大力支持得以將本食療研究室傳統中醫食療抗憂鬱研究得以產品化,以期實能將研究成果與日常生活做結合。
