研究理念及方向

       由于现代科技与知识的进步,人们在忙碌的生活中对于食品已不仅仅是生理上的需要,更是希望能够拥有高品质的食物选择,有效率的满足其在有限的时间里对生活品质和健康的追求。因此,当人们希望市面上的食品能更有营养价值、更美味、更安全、也更健康的时候,复合式食品 (multifunctional food) 的发展也就令人备受期待。所谓复合式食品的概念是指食品透过适当的加工方式,能够更完善的保留原料的营养价值、减少有害成份的产生、延长保存期限及稳定性、更符合现代人的口味、甚至于能透过添加功能性成份来达到更好的保健效果。目前各食品研究领域上的发展,虽已足够支持复合式食品的开发,但众多的研究成果却常无法充分整合应用,以致于目前食品产业还无法有效利用新的科技来提升产品品质。举例来说,当前许多食品研究皆致力于功能性成份开发与生物活性的评价。然而,大部分的功能性成份却常因为其化学或物理性质上的限制,而无法有效的被生物体吸收或利用,亦未能普遍的融入食品或保健产品的生产中。由以上所举例子可知,复合式食品的发展并不是任何单一研究领域上的创新即能促成的,而是透过食品各研究领域涵盖化学、加工及生物学方面的互相支持合作才有可能。因此希望在未来于食品领域的贡献除了能在食品科学技术研究上不断创新,也能够通过合作交流来整合各食品领域的研究成果,以期待未来能把学术上的新科技充分应用于产品开发中,终期盼本领域的发展成果能使消费者有所获益。
 
    根基于主持人过去之学术研究重点为功能性食品加工方面的研究以及探讨其实际对于机能性成份的口服生物利用度及活性的影响。透过了解活性成份的化学及物理性质,选择适合的包载系统 (delivery system) 和加工方法,已被许多实验成果证实为极有效率的方式来促进各活性成份在生物体内的利用度及效能。当充分整合现有的化学、加工和生物技术,机能性成份将能够被更有效也更广泛地融入于食品应用中。然而,所谓功能性食品并不仅局限于机能性成份的开发与应用,其他针对食物营养成份的优化或替代技术也是非常值得深入探讨的领域。
研究理念及方向
 
  • 保健食品加工: 各类保健食品加工与新生物材料应用方面探讨,含括各类型脂质乳化包载系统、微脂粒、奈米粒、微胶囊、壳聚醣奈米小球、缓控释系统和蛋白多胜肽类药物输送微球等研究。根据所包载活性成份的化学及物理性质,来选择不同的包载系统,并运用新的生物材料来做为系统组成成份,再加上运用充分优化的加工制程,以设计出最能促进生物效能及产品共融性的优良口服输送系统。
  • 营养成份替代: 此方向研究将着重于开发新材料或加工方法来代替传统生物材料 (醣类、脂类及蛋白质)在食品加工中的应用,以创造出更符合现代人对高品质低热量的功能性食品之期待。研究内容包含发展醣类替代物、脂肪替代材料与有机胶研发、过敏原蛋白类成份去除与替代,也会进一步研究此类材料在食品加工的稳定性,并评估其所产生的官能的差异来进行优化加工。
  • 新型加工科技于食品的开发与应用: 此方面研究将探索及扩展新型技术于食品加工上的应用及效果评价,所针对技术包括奈米技术、超音波技术、微波技术、电浆及高压杀菌技术等方法及未来其他新科技。虽然目前已有研究报导利用部分以上列举之新型技术来进行食品加工,但对于各技术的参数条件与食品品质的关联性还未能有深入之探讨。因此,这部份研究将对于新型加工技术与食品品质上的影响可做出有系统且深入的基理探讨与应用评估,并作为未来新技术转移至工业化应用的参考。
  • 消化基理、器官代谢、口服生物利用度、效果及毒性评估: 利用体外模拟方法及动物体内模型来评价及探讨加工后产品对生物体吸收、功能及可能产生的毒性评估。所使用模型涵盖:体外脂解模型、成份消化释放率、TIM-1全人体消化系统模拟、Caco-2小肠单层细胞吸收模型、体外代谢模拟、定点体内消化模型、药物动力学、器官分布、淋巴吸收、代谢产物分析,以及其他疾病预防和毒性分析模型。此方面的研究目的在于了解加工过程对于食品营养及功能性的影响,借以此评估所应用之技术对加工目标达成的效率和成果。
  • 抗老化、肥胖及美容类之功能性食品及药妆研究: 有鑑于大量的功能性食品研究专注在其对疾病的预防与治疗功效,但大部分的消费者除了希望有健康的身体之外,也期待能透过食疗的方法来达到更高品质的生活,其中对于外貌上的要求更是希望能够保持青春健康的形象,减缓老化及阻止肥胖产生。因此,本研究方向将着重于功能性成份中有助于抵抗衰老、肥胖、黑色素形成、氧化及促进胶原蛋白增生等美容相关活性分子研究及加工方法。
