實驗室研究方向
本研究室主要研究方向為食品加工/工程以及生化加工，尤其著重於具保健功能產品的研發
與產品功能性驗證。本研究室所研究之保健功能包括抗腫瘤、抗氧化、保護神經、造血功能
以及皮膚保健等。所採用之加工技術包括發酵技術、酵素水解以及各種分離技術。除此之外
本研究室亦從事食品包裝研究，以功能性包裝為主。
