研究理念及方向

       由於現代科技與知識的進步,人們在忙碌的生活中對於食品已不僅僅是生理上的需要,更是希望能夠擁有高品質的食物選擇,有效率的滿足其在有限的時間裡對生活品質和健康的追求。因此,當人們希望市面上的食品能更有營養價值、更美味、更安全、也更健康的時候,複合式食品 (multifunctional food) 的發展也就令人備受期待。所謂複合式食品的概念是指食品透過適當的加工方式,能夠更完善的保留原料的營養價值、減少有害成份的產生、延長保存期限及穩定性、更符合現代人的口味、甚至於能透過添加功能性成份來達到更好的保健效果。目前各食品研究領域上的發展,雖已足夠支持複合式食品的開發,但眾多的研究成果卻常無法充分整合應用,以致於目前食品產業還無法有效利用新的科技來提升產品品質。舉例來說,當前許多食品研究皆致力於功能性成份開發與生物活性的評價。然而,大部分的功能性成份卻常因為其化學或物理性質上的限制,而無法有效的被生物體吸收或利用,亦未能普遍的融入食品或保健產品的生產中。由以上所舉例子可知,複合式食品的發展並不是任何單一研究領域上的創新即能促成的,而是透過食品各研究領域涵蓋化學、加工及生物學方面的互相支持合作才有可能。因此希望在未來於食品領域的貢獻除了能在食品科學技術研究上不斷創新,也能夠通過合作交流來整合各食品領域的研究成果,以期待未來能把學術上的新科技充分應用於產品開發中,終期盼本領域的發展成果能使消費者有所獲益。
 
    根基於主持人過去之學術研究重點為功能性食品加工方面的研究以及探討其實際對於機能性成份的口服生物利用度及活性的影響。透過了解活性成份的化學及物理性質,選擇適合的包載系統 (delivery system) 和加工方法,已被許多實驗成果證實為極有效率的方式來促進各活性成份在生物體內的利用度及效能。當充分整合現有的化學、加工和生物技術,機能性成份將能夠被更有效也更廣泛地融入於食品應用中。然而,所謂功能性食品並不僅局限於機能性成份的開發與應用,其他針對食物營養成份的優化或替代技術也是非常值得深入探討的領域。
研究理念及方向
 
  • 保健食品加工: 各類保健食品加工與新生物材料應用方面探討,含括各類型脂質乳化包載系統、微脂粒、奈米粒、微膠囊、殼聚醣奈米小球、緩控釋系統和蛋白多胜肽類藥物輸送微球等研究。根據所包載活性成份的化學及物理性質,來選擇不同的包載系統,並運用新的生物材料來做為系統組成成份,再加上運用充分優化的加工製程,以設計出最能促進生物效能及產品共融性的優良口服輸送系統。
  • 營養成份替代: 此方向研究將著重於開發新材料或加工方法來代替傳統生物材料 (醣類、脂類及蛋白質)在食品加工中的應用,以創造出更符合現代人對高品質低熱量的功能性食品之期待。研究內容包含發展醣類替代物、脂肪替代材料與有機膠研發、過敏原蛋白類成份去除與替代,也會進一步研究此類材料在食品加工的穩定性,並評估其所產生的官能的差異來進行優化加工。
  • 新型加工科技於食品的開發與應用: 此方面研究將探索及擴展新型技術於食品加工上的應用及效果評價,所針對技術包括奈米技術、超音波技術、微波技術、電漿及高壓殺菌技術等方法及未來其他新科技。雖然目前已有研究報導利用部分以上列舉之新型技術來進行食品加工,但對於各技術的參數條件與食品品質的關聯性還未能有深入之探討。因此,這部份研究將對於新型加工技術與食品品質上的影響可做出有系統且深入的基理探討與應用評估,並作為未來新技術轉移至工業化應用的參考。
  • 消化基理、器官代謝、口服生物利用度、效果及毒性評估: 利用體外模擬方法及動物體內模型來評價及探討加工後產品對生物體吸收、功能及可能產生的毒性評估。所使用模型涵蓋:體外脂解模型、成份消化釋放率、TIM-1全人體消化系統模擬、Caco-2小腸單層細胞吸收模型、體外代謝模擬、定點體內消化模型、藥物動力學、器官分布、淋巴吸收、代謝產物分析,以及其他疾病預防和毒性分析模型。此方面的研究目的在於了解加工過程對於食品營養及功能性的影響,藉以此評估所應用之技術對加工目標達成的效率和成果。
  • 抗老化、肥胖及美容類之功能性食品及藥妝研究: 有鑑於大量的功能性食品研究專注在其對疾病的預防與治療功效,但大部分的消費者除了希望有健康的身體之外,也期待能透過食療的方法來達到更高品質的生活,其中對於外貌上的要求更是希望能夠保持青春健康的形象,減緩老化及阻止肥胖產生。因此,本研究方向將著重於功能性成份中有助於抵抗衰老、肥胖、黑色素形成、氧化及促進膠原蛋白增生等美容相關活性分子研究及加工方法。
