Description of Research:
Our laboratory's main research interests are elucidating food components' chemical structures and reactions, especially functional carbohydrates, through analytical aspects. According to the polarity and molecular weight of food molecules, we utilize the technique of extraction, enrichment, and purification to collect the target compounds with potential for development or meet research interests, analyze the chemical structure characteristics of the molecules by spectral analysis, modify them with physical, enzymatic or chemical methods to understand the texture, function, digestion and absorption, physiological regulation, influence on gut microbiota and processing stability of the food molecules. Gas chromatography and liquid chromatography coupled with mass spectrometry are commonly used analytical tools in our chemical studies. The primary research materials are starch-rich crops (such as cereals, legumes, and rhizomes), polysaccharide hydrocolloid-bearing plants (such as fruits and vegetables, sprouts, and algae), and herbal mushrooms (Lentinula edodes, Ganoderma lucidum). Our main goals are identifying, transforming, and modifying polyphenols, flavonoids, saponins, sterols, lipids, and functional carbohydrates in food products. Because we master core food molecules' analysis, enrichment, and transformation technology, we regularly cooperate with teams in crop production, processing, and health product development and provide critical quality control assistance for chemical and physical properties.
 
Ongoing research:
  1. Identify polyphenols, flavonoids, triterpenoids, sterols, and saponin compounds (and their metabolites) in plants and mushrooms and their applications in functional food.
  2. Elucidate structural characteristics of functional polysaccharides from cereals, vegetables, fruits, mushrooms, and herbs.
  3. Compare the compositional differences among industrialized prebiotic oligosaccharides and honey oligosaccharides.
  4. Analyze breast milk oligosaccharides and lipids from Taiwanese mothers and their impacts on gut microbiota.
  5. Develop non-targeted spectral analysis platforms for natural products through high-resolution tandem mass spectrometry.
