本研究室主要研究方向为食品加工/工程以及生化加工,尤其着重于具保健功能产品的研发
与产品功能性验证。本研究室所研究之保健功能包括抗肿瘤、抗氧化、保护神经、造血功能
以及皮肤保健等。所采用之加工技术包括发酵技术、酵素水解以及各种分离技术。除此之外
本研究室亦从事食品包装研究,以功能性包装为主。
